Fermented Food Cafe ‘Tsuke x Koji Haccomachi’ to Open in Kyoto’s Sanjo Area
19.February.2020 | FOOD
Tsuke x Koji Haccomachi is a new cafe opening in the Sanjo area of Kyoto on February 22, 2020, that is centred entirely on fermented foods.
The name “Haccomachi” derives from the Japanese word Hakko (Hacco), meaning fermented, and Komachi (Comachi), meaning a beautiful woman. The cafe hopes for people to incorporate fermented foods into their livesーsomething which is rooted in Japanese food cultureーand live comfortably.
The cafe’s logo showcases the making of kōjiーa type of mould used in the fermentation process of certain food products in Japan, like soybeans. The logo hope to pass down this long upheld tradition.
Hakko fermentation is a major part of Japan’s food culture. Since ancient times, the sweetness and umami brought about by the enzymes in the fermentation process have served to accompany many foods in the country, such as miso, soy sauce, mirin, rice vinegar, and so onーall traditional condiments used in the Japanese kitchen that are still fundamental today.
The menu at Tsuke x Koji Haccomachi features a line-up of fermented foods made in Kyoto, including those from Kyoto-based soybean makers Fujiwara Shokuhin, Sawai Shoyu Honten which has produced the same high quality soy sauce for decades, sake brewery Kitagawa Honke which has been around since the Edo Period, and more.
A Small Look at the Menu
Haccomachi Special – Fermented Lunch Plate: ¥1,690
This lunch plate is an assortment of hors d’oeuvre made with fermented condiments, tandoori chicken that has been pickled to elevate the umami, marlin fish, soup, and more.
Spare Ribs On The Bone in Miso Yuan Yaki: ¥1,490
This hearty portion of spare ribs are marinated in a miso, mirin, and soy sauce mix. Taste the full umami flavour of the juicy meat.
Namerō Miso Salmon in Yoghurt Sauce: ¥770
The salmon is served namerō style, a type of tataki or pounding method, in miso. The yoghurt has both a refreshing and rich flavour.
Homemade Komekoji Rice Malt Sweet Sake Yoghurt: ¥470
The splitting of the sour yoghurt serves to elevate the sweetness of the sake. This is a drink that even those who don’t like sweet sake are sure to enjoy.
Miso Pound Cake w/ Vanilla Ice Cream: ¥550
The miso pound cake is a collaboration with Japanese confectionery company Sarasa, which has 6 branches of cafes and shops in Kyoto. It’s made using komekoji rice malt powder provided by an old-fashioned Japanese shop (菱六もやし). The umami of the miso is intensified, and the cake stays moist thanks to the powder. It’s served with a dollop of refreshing vanilla ice cream.
Blackcurrant & Vanilla Sweet Sake Affogato: ¥550
A unique spin on the affogato dessert which has you pouring hot sweet sake over tangy and refreshing blackcurrant sherbet and rich vanilla ice cream. Enjoy the mix of the hot sake and the cool ice cream.

Kyoto’s World Heritage Site Nijo Castle Announces Summer Evening Illumination Event
09.July.2020 | SPOT
NAKED, INC. has announced that it is holding a special summertime light-up event at Nijo Castle, a World Heritage Site in Kyoto, from August 8 to August 30. The company has also released its first ever 3DCG VR experience NAKED NINJA -Nijo-jo Castle- on the official NAKED, INC. online store.
Enjoy art entertainment in person or at home
NAKED, INC. has collaborated with many World Heritage Sites, Cultural Properties, tourism centres, leisure spots, and more over the years. Right now, the company is grappling with the question of what the shape of tourism, as well as art and entertainment, looks like during the COVID-19 outbreak—and what shape it will take post-pandemic. Nijo Castle is no exception, a place that enjoys tourism from both Japanese people and people overseas. In considering these issues, NAKED has conceived two different ways Nijo Castle can still entertain tourism now and in the near future.
The first is holding an event in person at Nijo Castle in the form of an outdoor light-up event that will have people wandering around as opposed to being stationary. In spring of 2017, NAKED held “Nijo Castle Cherry Blossom Festival 2017” where they hosted a variety of performances and events in line with the season. In fact, one such event was planned to take place at Nijo Castle this summer, but it had to be reconsidered as a result of COVID-19. Those involved still wanted to come up with a way that people who live close by could still enjoy some leisure time this summer, which is what led to this light-up event from NAKED.
Visitors will be able to enjoy the light-up safely by staying a set distance from one another while walking around Nijo Castle. The number of people inside at once will also be restricted. As well as this, people will need to wear masks, temperature will be regulated, and alcohol gel will be provided—all to ensure that visitors are kept safe.
The second way that NAKED has devised for people to still enjoy Nijo Castle is with the release of NAKED NINJA -Nijo-jo Castle-, the company’s first ever full 3DCG VR experience that lets people enjoy Nijo Castle online in a virtual space. This is so that people who cannot visit Nijo Castle can still enjoy its sights. NAKED plans to launch even more real and virtual, offline and online experiences in the future too in order to promote tourism in a new way during COVID-19.

The area is also known for kawadoko which is where Kibune’s restaurants build platforms over the river where visitors can enjoy their meal as the water flows beneath them.
Kifune Shrine and Tanabata

PLANETARIA TOKYO has brought back its planetarium work Tokyo no Amanogawa o Wasurenai (Never Forget Tokyo’s Milky Way). The show makes use of works left behind by Japanese novelist Kenji Miyazawa, poets Chūya Nakahara and Yumeji Takehisa, and others, to bring viewers back to a time when you used to be able to see the Milky Way in the city of Tokyo. When the city lights switch off for the night, the former Milky Way will shine its radiant brilliance. Viewers will be able to see the same sight that so many artists and writers saw when creating works about Tokyo’s starry sky.
Make a wish upon a falling star
A popular service at PLANETARIA TOKYO that is also free is getting to see falling stars in real time with a system set up by Meteor Broadcaster. They are shown across a giant 12m long screen. On the Gregorian calendar, Tanabata is celebrated on July 7, but on the old Japanese lunisolar calendar it will fall on August 25 this year. If you’re in Tokyo around that time, why not visit the planetarium and make a wish?
Online shop to enjoy the Milky Way at home
Gallery Planetaria is a concept shop in PLANETARIA TOKYO whose concept is based around being a secret shop hidden away somewhere in the galaxy.
