Classy Bread Makers ‘Nogami’ Set Up Shop in Tokyo

Koukyuu Shoku Pan, or “high quality bread” is something that’s being picked up by various news and media outlets in Japan these days and something a lot of people in the country will have heard of.

 

Nogami is a shop in Osaka that is said to have first come up with this kind of bread, and now they’re taking it to Tokyo. The new branch officially opened in the capital’s district of Azabu-Jūban on November 15, 2018.

The first branch of Nogami first opened in Osaka in 2013 in an effort to deliver excitement to the people of Japan through bread. When it hit the market word spread with people praising it for its melt-in-the-mouth dough, its pleasantly soft texture and elasticity, and its delicious, sweet taste all meant to be enjoyed untoasted. A mere 5 years have passed since the shop first opened and now it boasts over 100 branches across Japan where they sell around 50,000 products in a single day.

Over 100 customers rolled up to the new branch in Azabu-Jūban on its first day proving its popularity. At no point was the shop not busy from the time it opened at 11am – and everything sold out before closing hours!

 

No eggs are used when making the bread. It is made from 100% high quality wheat flour from Canada. Each and every loaf is carefully made individually by the shop’s pastry experts. Because Nogami was the first to create this bread it means they’ve been able to perfect it over a long period of time.

 

This “raw” bread as they call it has a taste and texture you can’t get anywhere else. Try it yourself at the first ever shop in Tokyo.

    TAMAGOYA are releasing the French toast ‘Tamago Yaaki’ which is made to look like tamagoyaki―a type of Japanese omelette―on May 26.

    It’s made with TAMAGOYA’s special richly-flavoured eggs, milk, sugar and vanilla oil. It also uses specially made rich liquid purin with a little salt. So that everything combines well with the liquid purin, an original type of bread is used.

    The bread is carefully soaked in the liquid purin and left to set for 12 hours. Upon ordering, it’s heated very carefully from a low heat, which is part of the secret to its delicious taste. There’s also four toppings to pick from to enjoy with it.

     

    Because it takes time to make the Tamago Yaaki, only 10 are served on weekdays and 20 on weekends. You’d best get there fast if you want one! It also takes about 20 minutes to cook it after ordering.

    Additionally, customers who order the Tamago Yaaki and Medama Yaaki together will receive a ¥100 discount from the total price.

  • Ore no Bakery & Cafe Rebrands its ‘Ore no Seishoku Pan’ Bread

    Ore no Bakery & Cafe sells over 2,000 loafs of its immensely popular Ore no Seishoku Pan bread a day. The bread is set to be rebranded on June 1 where it will go on sale with the new name Ginza's Bread.

    The reason behind the name change is that ever since opening, the establishment has set huge standards in Ginza. Ginza has a long history and is at the forefront of setting trends and fads in Japan. The fact that it's a district with people of good taste is a testament to the number of leading restaurants that have stayed open there for many years.


    Ore no Bakery & Cafe is launching Ginza's Bread because it wants to serve the best bread around in Ginza.

    This high quality loaf is made using skimmed milk from cows in a natural open range in Nakahora Bokojou which is located 700-850 meters among the mountains in Iwaizumi, Iwate Prefecture.

     

    Ginza's Bread ~Kaori~ is an aromatic bread made using domestic 'Kitano Kaori' wheat. You can really taste the milk in this loaf.

     

    Ginza's Bread ~Yume~ is a sweet and chewy bread made using domestic 'Yume Chikara' wheat. With this one you can savour the original taste of the wheat. It's best eaten on the same day you buy it without toasting it.



    Together with the new name, the bread has also received a new logo too displaying Nakahora Bokojou and the wheat farms. The philosophy behind it is to tie people to the country's excellent producers.


    Additionally, the store is setting on an online ordering system for collection. Upon ordering you don't have to wait long at all to collect your freshly made Ginza's Bread.

    To celebrate the rebranding, the shop will release the new seasonal Black Sesame Seed & Cream Cheese loaf from its high-quality bread series. It's filled with rich cream cheese and has a subtle hint of lemon inside.

    The Pasco Kumamoto Prefecture Project is a collaboration between the Japanese pastry company Pasco and Kumamoto Prefecture which has appointed Kumamon, the mascot of Kumamoto, as its head to promote local foods.   The project was started as a reconstruction and restoration effort to help support Kumamoto after the devastating earthquake that struck in 2016 and the 2018 Japan floods. For every select product sold, 0.5 yen is donated to the relief effort to aid victims of the disasters.The Pasco Kumamoto Prefecture Project is set to run until end end of September this year. It released two items on April 1 as part of the project. It is now releasing two new products: the "Strawberry Jam & Milk Whipped Cream" pastry and "Pancake Omelette Custard & Milk Whipped Cream." The milk, strawberries, and eggs used for these confections are all sourced from KumamotoThe pastry recipe creates whipped cream from milk and layers it with a strawberry jam made from yuubeni, a popular brand of strawberry grown in Kumamoto, before baking. The pancake omelette is a combination of Jersey milk, eggs, and custard cream to create a fluffy dessert.

    The ingredients used in the recipes for these food products are all carefully selected to go deliciously well with Pasco's bread. This includes milk, eggs, and yuubeni strawberries. Pasco plans to used Kumamoto-grown rice for a new product in August.
